Multivariate Analysis of Quality and Mineral Parameters on Golden Smoothee Apples Treated Before Harvest with Calcium and Stored in Controlled Atmosphere

Pre-harvest calcium treatments were applied with the aim of increasing the calcium content and improving the textural parameters in Golden Smoothee apples. Apple trees were sprayed 6 or 12 times with ``Stopit'' (a commercial product) at a rate of 1% (v/v), beginning 60 days after full bloom. The fruit was harvested at commercial maturity and stored for four and six months in controlled atmosphere at ultra-low oxygen regime. Data were analyzed using ANOVA analysis and chemometric techniques. The results showed that both 6 and 12 calcium applications were equally effective at increasing the calcium content in the fruit. Firmness, measured with a texture analyzer, increased when calcium was applied. However, an increase in the number of calcium applications did not lead to a significant improvement in texture. Calcium content showed a strong positive correlation with maximum penetration force (force Magness—Taylor) and a strong negative correlation with acidity. These quality parameters, together with the phosphorus, nitrogen, and boron content, were the variables most closely correlated with the calcium content of the fruit. The rest of the textural and quality parameters analyzed showed no significant correlation with the calcium content. The results also showed that the effect of calcium on texture and other quality attributes decreases with the length of storage.

Se ensayaron dos estrategias de tratamiento precosecha con calcio en manzanas cv. Golden Smoothee con el objetivo de aumentar el contenido de calcio y de mejorar sus parámetros texturales. Los árboles se pulverizaron 6 o 12 veces con el producto comercial ``Stopit'', en proporción del 1% (v/v); las aplicaciones se realizaron a partir de los 60 días despue's de plena floración. Los frutos se recolectaron en estado de madurez comercial; una parte de ellos se conservaron durante 4 y 6 meses en atmósfera controlada en condiciones de muy bajo contendio de oxígeno. Los resultados se analizaron estadísticamente mediante el análisis de la varianza y de técnicas quimiométricas. Tanto el tratamiento con 6 o con 12 aplicaciones de calcio fueron igualmente efectivos para aumentar el contenido de calcio de las manzanas, independientemente del número de aplicaciones. La firmeza de la fruta tratada con calcio, medida con texturómetro, aumentó. Sin embargo, la duplicación del número de aplicaciones de calcio no causó una mejora significativa en los parámetros texturales estudiados. El contenido de calcio en la fruta manifiestó una fuerte correlación positiva con la fuerza máxima de penetración (fuerza Magness-Taylor) y negativa con la acidez. Estas variables junto a los contenidos minerales de fósforo, nitrógeno y boro tuvieron una estrecha correlación con el contenido de calcio. El resto de los parámetros texturales y otros atributos de calidad tuvieron correlaciones bastante débiles con el contenido de calcio. Se observó también que el efecto del calcio sobre la textura y otros parámetros de calidad disminuía a medida que se prolongaba el tiempo de almacenamiento.
