The etymology of the word “pudding” is actually a matter of dispute. According to the Oxford English Dictionary, the French word “boudin” is one possibility, but there are many others. That said, I stand corrected (perhaps) on the fact of black pudding’s geographical origin. Mentions of blood sausage appear in ancient Greece; and it was a popular delicacy throughout the Roman empire.
